Ingredients
- For the Steak Bites:
- 1 ½ pounds sirloin or ribeye steak, cut into 1-inch cubes
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- For the Pasta and Sauce:
- 8 ounces medium shell pasta
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ¼ teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook shell pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta water.
- Cook the Steak Bites: Pat steak cubes dry with paper towels and season with salt, pepper, and Italian seasoning.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the steak bites in a single layer (cook in batches if needed). Sear for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Do not burn.
- Make the Alfredo Sauce: Reduce heat to medium. Add 3 tablespoons butter and melt, then pour in the heavy cream. Simmer for 2–3 minutes, stirring frequently.
- Add Parmesan cheese and stir until melted and sauce thickens. Season with salt, pepper, and red pepper flakes (if using).
- Toss in the cooked shell pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
- Return the steak bites to the pan and toss everything together until well coated in the creamy garlic butter Alfredo sauce.
- Garnish with chopped parsley and serve immediately.
