Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • 1 whole head garlic
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: chopped chives or green onions
  • Optional: grated Parmesan cheese


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30–35 minutes until soft.
  3. In a large pot, melt butter over medium heat and sauté onion until translucent.
  4. Add diced potatoes and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 15–20 minutes until potatoes are fork-tender.
  6. Squeeze roasted garlic cloves into the pot.
  7. Blend soup until smooth using an immersion blender or blender.
  8. Stir in milk or cream and season with salt and pepper.
  9. Heat gently and serve topped with chives or Parmesan if desired.
