Ingredients
- 2 lbs russet potatoes, peeled and diced
- 1 whole head garlic
- 1 tablespoon olive oil
- 1 small onion, diced
- 4 cups vegetable broth

- Black pepper, to taste

Instructions
- Preheat oven to 400°F (200°C).

- In a large pot, melt butter over medium heat and sauté onion until translucent.
- Add diced potatoes and vegetable broth; bring to a boil.

- Squeeze roasted garlic cloves into the pot.
- Blend soup until smooth using an immersion blender or blender.
- Stir in milk or cream and season with salt and pepper.
