A rich, creamy, and ultra-cheesy dip loaded with melted cheese, green chiles, and a touch of spice — the ultimate party appetizer that’s guaranteed to make you the star of any gathering.
Ingredients
- 1 pound Velveeta cheese, cubed
- 1 (8-ounce) package cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 (10-ounce) can diced tomatoes with green chiles (like Rotel), undrained
- ½ cup sour cream
- ¼ cup milk
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon black pepper
- 2 tablespoons chopped green onions or cilantro (for garnish)
- Tortilla chips, crackers, or veggies, for serving
Instructions
- In a large saucepan or skillet, combine Velveeta, cream cheese, cheddar, and milk over medium-low heat.
- Stir frequently until cheeses begin to melt and blend together.
- Add diced tomatoes with green chiles, sour cream, garlic powder, smoked paprika, cayenne (if using), and black pepper. Continue stirring until smooth and creamy.
- Reduce heat to low and simmer for 5 minutes, stirring occasionally to prevent sticking.
- Pour the cheese dip into a serving bowl or slow cooker set to warm.
- Garnish with chopped green onions or cilantro and serve warm with tortilla chips or dippers of choice.
Notes
- For extra flavor, add cooked crumbled sausage, ground beef, or bacon bits.
- Keep the dip warm in a small slow cooker during parties to maintain creaminess.
- If the dip thickens too much, stir in a splash of milk to thin it out.
- Leftovers can be reheated in the microwave or on the stovetop over low heat.
