Ingredients
- 1 1/2 pounds fresh green beans, trimmed and cut into 1-inch pieces
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 medium onion, finely diced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- 1 teaspoon soy sauce
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 1 1/2 cups crispy fried onions (divided)
Instructions
- Preheat oven to 375°F (190°C).
- Bring a pot of salted water to a boil. Add green beans and blanch for 4–5 minutes until bright green and crisp-tender. Drain and rinse with cold water to stop cooking.
- In a large skillet, heat butter and olive oil over medium heat. Add onions and mushrooms; cook for 6–8 minutes until softened and lightly browned.
- Add garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the mixture, stirring until fully absorbed.
- Slowly pour in broth and heavy cream while stirring. Add soy sauce, salt, pepper, and paprika. Simmer for 3–4 minutes until thickened.
- Remove from heat and stir in the blanched green beans and 1/2 cup of the fried onions.
- Transfer mixture to a 9×13-inch baking dish and spread evenly.
- Top with the remaining fried onions.
- Bake for 20–25 minutes until bubbly and golden on top.
Notes
- Use fresh green beans for best texture, but frozen beans work well too.
- Add a splash of white wine to the mushroom sauce for extra depth.
- Make ahead by preparing the casserole without the topping; refrigerate up to 24 hours, then bake with fresh fried onions.
