Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, thinly sliced
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 ½ cups chicken broth
- ½ cup heavy cream (or half-and-half)
- 1 teaspoon Worcestershire sauce
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Season chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 4–5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove and set aside.
- In the same skillet, reduce heat to medium. Add butter and sliced onions. Cook for 3–4 minutes until softened, then add mushrooms and sauté for another 5–6 minutes until golden.
- Add minced garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over the mixture and stir to coat the onions and mushrooms evenly.
- Gradually whisk in chicken broth, scraping up any browned bits from the bottom of the pan. Stir until sauce thickens, about 2–3 minutes.
- Reduce heat to low, then stir in heavy cream and Worcestershire sauce. Simmer for 2–3 minutes until creamy and smooth.
- Return the chicken to the skillet, spooning the sauce over the top. Simmer for 5 minutes to let the flavors meld.
- Garnish with fresh parsley and serve hot with mashed potatoes, rice, or roasted vegetables.
