Description
A creamy, comforting soup that combines all the flavors of classic white chicken lasagna — tender chicken, lasagna noodles, spinach, and a rich Parmesan cream broth that’s hearty and soul-warming.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts (or thighs), diced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
- 6 cups chicken broth
- 8 lasagna noodles, broken into bite-sized pieces
- 2 cups baby spinach, chopped
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
- In the same pot, add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add Italian seasoning, salt, black pepper, and red pepper flakes. Stir to coat the aromatics.
- Pour in chicken broth and bring to a boil. Add broken lasagna noodles and cook for 8–10 minutes, stirring occasionally, until tender.
- Reduce heat to low and stir in cooked chicken and spinach. Simmer for 2–3 minutes until the spinach wilts.
- In a medium bowl, whisk together heavy cream, ricotta, mozzarella, and Parmesan until smooth. Slowly stir the mixture into the soup, stirring continuously until creamy and well combined.
- Simmer for 3–4 minutes, stirring occasionally, until the soup thickens slightly and becomes rich and cheesy.
- Taste and adjust seasoning as needed. Garnish with fresh parsley and extra Parmesan before serving.
Notes
- For extra flavor, add sautéed mushrooms or sun-dried tomatoes.
- If the soup thickens too much, thin it with a little extra chicken broth or cream.
- Use rotisserie chicken for a faster prep time.
