Description

A creamy, comforting soup that combines all the flavors of classic white chicken lasagna — tender chicken, lasagna noodles, spinach, and a rich Parmesan cream broth that’s hearty and soul-warming.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts (or thighs), diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 6 cups chicken broth
  • 8 lasagna noodles, broken into bite-sized pieces
  • 2 cups baby spinach, chopped
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
  2. In the same pot, add diced onion and cook for 3–4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add Italian seasoning, salt, black pepper, and red pepper flakes. Stir to coat the aromatics.
  4. Pour in chicken broth and bring to a boil. Add broken lasagna noodles and cook for 8–10 minutes, stirring occasionally, until tender.
  5. Reduce heat to low and stir in cooked chicken and spinach. Simmer for 2–3 minutes until the spinach wilts.
  6. In a medium bowl, whisk together heavy cream, ricotta, mozzarella, and Parmesan until smooth. Slowly stir the mixture into the soup, stirring continuously until creamy and well combined.
  7. Simmer for 3–4 minutes, stirring occasionally, until the soup thickens slightly and becomes rich and cheesy.
  8. Taste and adjust seasoning as needed. Garnish with fresh parsley and extra Parmesan before serving.

Notes

  • For extra flavor, add sautéed mushrooms or sun-dried tomatoes.
  • If the soup thickens too much, thin it with a little extra chicken broth or cream.
  • Use rotisserie chicken for a faster prep time.
